Shrimp,Broccoli and Rice

 After achieving healthier lifestyles, Oz viewers were inspired to create their own healthy recipes just for you! Eat (good) fat to lose fat with this delicious shrimp and broccoli recipe.




 Ingredients:
-Makes 8 servings
-2-3 cups jasmine rice, prepared according to directions.
-1 lb large shrimp, peeled & deveined
-2-3 cups fresh or steamed fresh frozen broccoli
-1/2 cup egg beaters, whisk lightly
-2 tbsp extra virgin olive oil
-1 medium sweet onion, chopped
-2 tbsp green onions or chives
-Sea salt and black pepper

Directions
Make rice the day before. Prepare rice according to directions. Set aside. Add olive oil to large skillet over medium heat. Add onions. Sauté for about 3-5 minutes. While sautéing onions, add salt & pepper to egg beaters. Whisk lightly; set aside.

Add shrimp to skillet. Sauté shrimp until they are almost done. Add fresh or steamed fresh broccoli. Sauté for about 5 minutes, stirring constantly.

Push ingredients to one side of the skillet. Add the eggs & quickly scramble eggs. Stir all ingredients together. Add cooked jasmine rice. Stir all ingredients together. Sprinkle with green onions or chives.

Serve with mixed green salad. Enjoy!
